Would you consider BBQ a Trini street food?

Well would you? I mean the guy is cooking on the pavement which is real close to the street. So….?

Man...fire...food!


Barbecue (also barbeque, BBQ and barby/barbies) is both a cooking method and an apparatus. The generally accepted differences between barbecuing and grilling are cooking durations and the types of heat used. Grilling is generally done quickly over moderate-to-high direct heat that produces little smoke, while barbecuing is done slowly over low, indirect heat and the food is flavored by the smoking process.

Your BBQ is only as good as your BBQ sauce!

Your BBQ is only as good as your sauce – but as Trinis like to ask “dat is home-made or bottle?...then don’t bother to wait for the answer to say “lemme get a lil extra sauce on d side nah”

Did you know the buccaneers who came to the Caribbean practiced a form of BBQ to preserve their meat? Some etymologists believe the word barbecue comes from “barabicu” found in the language of the Taíno people of the Caribbean. Contrary to current perception, BBQ is not an American invention.

So Trinis have a long history of enjoying their BBQ let me tell you! Heavily seasoned meats first grilled on an open fire in a cut-open steel drum, charred and drenched in sauce to perfection….this is BBQ in Trinidad.
