This blog is for anyone who has ever wanted to become more familiar with or learn more about local cuisine from Trinidad and Tobago. The focus is on connecting the history of the island and its people to food items traditionally eaten on the islands.

Do you remember Holly T (Mr. Holly Thompson) and his beautiful voice? On a Sunday, his voice on the radio would keep us company in the kitchen. His instructions were clear about the callaloo boiling away on the stove. "Don't put it in a blender! Use a swizzle stick and if your hand gets tired, ask your husband to take a turn. Make sure to take out the red congo pepper before you swizzle it. It has to be smooth." Trinis love their food and take pride in it. I wanted to highlight this.

While the opinions and experiences expressed on this blog are my own, credit goes to the proprietors of factoids and images used. Please let me know what images are yours so that I can add your link. We need more information about Trinidad culture in cyberspace.

The language used in the blog is a deliberate mix of local colloquialisms. Can't talk about Trini food and not speak the language! Hopefully non-Trinis will still get the point.

This blog was developed as a project towards partial fulfilment of a Masters in Business Administration (MBA). However, deciding on a subject matter was easy, it had to be Trini food.
